See my latest version of this classic summer fair.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>While the classic caprese salad is simplicity itself, I have never been a fan of fresh mozzarella cheese that is mealy from being soaked by tomato juice. The following takes care of the problem. One tomato and one ball of mozzarella serves two.<\/p>\n<p>&nbsp;<\/p>\n<p class=\"center\"><b>INGREDIENTS<\/b><br \/>\nFresh ripe tomatoes, that have not been refrigerated<br \/>\nFirm fresh mozzarella<br \/>\nFresh basil, washed and dried<br \/>\nFresh spinach<br \/>\nKalamata or other cured olives<br \/>\nSalt- sea salt is preferred<\/p>\n<p>&nbsp;<\/p>\n<p class=\"center\"><b>METHOD<\/b><\/p>\n<p class=\"center\">Early in the day wash the mozzarella, and pat dry.<br \/>\nSlice into even pieces.<br \/>\nRip large basil leaves in one half, and put on the slices, reassemble the mozzarella into its original shape.<br \/>\nPut a little salt on your hands, and rub the ball lightly.<br \/>\nWrap it in saran wrap, and put in the ice box to cure.<\/p>\n<p class=\"center\">Clean the spinach, dry it, bag it, and put in the ice box until ready to plate the meal.<\/p>\n<p class=\"center\">Sometime in the afternoon cube the tomato,<br \/>\nadd salt, to bring up a brine.<br \/>\nOnce juices are flowing, toss with thinly shredded basil.<br \/>\nStir it occasionally.<br \/>\nLet sit at room temperature.<\/p>\n<p>&nbsp;<\/p>\n<p class=\"center\"><b>SERVING<\/b><br \/>\nWhen ready to serve put a layer of the spinach<br \/>\non the plates.<br \/>\nSpoon some of the tomatoes and juice on the spinach,<br \/>\nadd the cheese decoratively,<br \/>\nspoon more of the tomato and their juices over it all.<br \/>\nGarnish with more shredded basil<br \/>\nand the olives.<\/p>\n<p class=\"center\">The cool spinach and cheese are a wonderful contrast to the warm tomatoes!<br \/>\nAll you need is nice wine and crisp bread!<\/p>\n<p>&nbsp;<\/p>\n<p class=\"center\"><img decoding=\"async\" src=\"https:\/\/www.brickhousefabrics.com\/images\/stories\/Blog-recipes\/caprese-5002.jpg\" alt=\"\" border=\"0\" \/><\/p>\n<p class=\"caption\">CAPRESE SALAD<\/p>\n","protected":false},"excerpt":{"rendered":"<p>When summer tomatoes come in, and the heat and humidity are through the roof,who does not like a fast meal that still screams &#8220;SUMMER&#8221;?
